If you made the track lower in one place, just use a ramp.  ;D

Just drive the other way around the track then you won't fall off, and you get a free jump as well.
And if you ask nicely someone may even give you advice.

Changing the grade of the road in one place means you will have to change it someplace else to get it to match up.  There is no trick to it. You will just have to play with it. 

I would suggest starting with a flat track first, then adding your grade changes to that.
